Prosecco Superiore Conegliano Valdobbiadene D.O.C.G. Spumante Extra Dry "Sara"

Grape variety: Glera 100%.

Glera is an autochthonous grape variety already well known by ancient Romans, characterized by a pyramid-like large bunch quite scattered. This grape variety finds the ideal climate and soil environment in the Conegliano and Vittorio Veneto hills, precisely in the Corbanese hamlet in the town of Tarzo.
After the manual grape picking during the second half of September, grapes undergo a de-stemming procedure followed by a soft pressing (maximum 1 atmosphere) by a diaphragm pneumatic pressing machine. The alcoholic fermentation takes place in stainless steel tanks at a temperature of 18 °C. It is decanted twice and the first pressing obtained is left to rest in stainless steel tanks until spring.

The long sparkling process lasts about 50 days, it takes place in autoclaves at monitored temperature with special yeasts that enhance the fruit and flower notes of the wine. The sugar residue is 15 g per litre.

The alcohol content is 11,5%.
Excellent aperitif together with appetizers, this sparkling wine is well suited with fish and vegetables light first courses.
Taste it at 6-8 °C.
