Cabernet Franc I.G.T. Marca Trevigiana "Alba 99"

Alba is Cesare's older sister. A very determined and long-lived woman who has always preciously supported her brother's work and shared the same love for the land and search for quality wine and food products. The first Cabernet Franc vineyards belonged to her.

Grape variety: Cabernet Franc 100%.

Hilly medium textured soil of calcareous Marlstone.
The harvest is planned according to phenolic ripeness, in other words, the moment in which the best tannins to Anthocyanins ratio is achieved. After the manual grape picking, grapes undergo a de-stemming and treading procedure.

The alcoholic fermentation and soaking takes place in steel tanks at a constant temperature of 20-22 °C. Pumping over is carried out twice a day in order to keep a damped must top and distil pigments from skins. During alcoholic fermentation must is left on peels for 8 to 10 days depending on the quality of the grapes for that year and the phenolic ripeness. The wine is left in steel tanks for one year to allow malolactic fermentation to take place.
The wine is then refined in bottles. The dry residue is equal to 22 grams per litre.

The alcohol content is 12%.
Excellent with cold cuts, white and red meat and strong courses in general.
Taste it at 18 °C.
